Hi, I am Georgetta Dane, winemaker for Cocobon.
For me, creating wine is a sensory experience. It’s a process that mixes science and art and soul. I use precision in the fermentation process, creativity in blending, and introspection in refining a wine. All of my senses ― sight, smell, taste, touch and hearing ― are heightened.
I use all of my five senses to create Cocobon. Here’s how:
When pouring a glass of wine, I look at its color and clarity. A wine’s appearance can prime the nose and the palate for the aromas and flavors to come, setting expectations for the entire experience. Cocobon’s deep crimson color prepares you for flavors of cherry, mocha, and cocoa.
Our sense of smell is powerful. It is 1,000 times more sensitive than the sense of taste and influences 75 percent of what we taste in wine. I look for aromas of dark fruits, chocolate, mocha and vanilla when selecting varietals for my blends. As you swirl and sniff Cocobon you should experience notes of coffee, cocoa, fruit and vanilla.
I consider taste the second most important sense in experiencing wine. In addition to the four basic tastes our tongues detect ― bitter, salty, sour and sweet ― I love the eastern theory of a fifth taste of umami, or savory, and aspire to create something delicious in each bottle. As you sip Cocobon you will be taken on a journey from cherry and chocolate to mocha and vanilla.
As a sip of wine rolls over the tongue, we can feel its texture, body, tannins and temperature. While these elements don’t necessarily have a particular taste, they do figure in to the overall flavor impression. Cocobon’s texture is meant to be velvety and plush at the same time, creating the experience of enjoying a bonbon.
There’s a time for sound in my winery, such as during fermentation, and there’s a time for silence, such as during blending. Maintaining a quiet environment is essential to helping me concentrate and create. The sounds surrounding your Cocobon experience include both pouring Cocobon into your glass and the ambient noise of all that is happening around you as you enjoy the wine.
